I wanted to make something in that style and I also got to help farm this vineyard with a good friend. I’m so so excited to share this wine. It’s something special.WinemakingFermented with – Native yeastsAged in – Neutral French oak barrels for 11 months on gross lees without sulfurpH – 3.11ABV - 12.0%Additions – 15 parts per million sulfur right before bottlingMethod – Direct to press whole cluster then fermented in barrel. Fermented for a full month before it finished. Production: 662 Bottles only!
